1 pound thick cut bacon
1/3 cup pure maple syrup
1/2 cup brown sugar
1/2 teaspoon white pepper
1/2 teaspoon smoked or regular paprika Sharp mustard for dipping
1. Preheat oven to 400 degrees
2. Combine brown sugar and bacon and stir well. Lay the bacon on a wire rack on a baking pan, brush the top of the bacon with maple syrup and sprinkle on some brown sugar.
3. Bake for 15 minutes, then flip the bacon, brush with maple and brown sugar mixture and bake for another 10 minutes or until it reaches the desired level of crispiness.
4. Sprinkle with white pepper and paprika and serve warm on absorbent paper with mustard on the side for dipping.
